A Malbec and Syrah blend from Tikal's Demeter certified biodynamic vineyard in Vista Flores (Uco Valley), expressing the local terroir's freshness, finesse and spice.
Tasting Notes
This is Malbec and Syrah in their most natural expression of untouched grapes shining through and capturing the true essence of the biodynamic vineyard where they were picked. It has a beautiful pomegranate color and aroma of fresh red cherries with light French oak undertones. The palate is fresh and lively with black raspberry and spiced mocha notes.
Food Pairing
A great companion to barbeque or burgers, and incredibly easy to drink on its own.
Tech Details
Site: Area Located in Tunuyan, in the middle part of Uco Valley Traditional area located on the North-West side of Tunuyan River. Slope < 1% in NE direction.
Soils: Alluvial, Sandy-loamy soil 1,2 mts depth with river stones in the subsoil. Good drainage.
Fermentation: Syrah fermentation in stainless steel tanks for 10 days with skin contact at 75.2-78.8ºF.
Malbec fermentation in stainless steel tanks for 12 days with skin contact at 78.7-82.4ºF. 10% whole cluster
Aging: 65% stainless steel and 35% in French oak barrels of 225 lts (20% new, 25% 2nd and 3rd use), and 55 % no oak.
