Located in the picturesque prefecture of Tochigi (known for its many onsen, or traditional hot spring baths), Tentaka produces brew so good that only 20% of it makes it out of the prefecture! The silent stream that lends its name to this sake originates deep in the jagged, snow-covered Nasu Mountains of Tochigi and runs hundreds of miles to the brewery, purifying the clear and untouched water that goes into this sake. Tentaka is also one of the few breweries who continue to follow the laborious, low-yielding, ultra-gentle drip-pressing method known as shizuku . The fermented sake is poured into meter-long canvas bags and then tied and hanged in a catch-basin where over several hours the clear sake drips through the canvas fibers only under its own weight. Now that's what we call gentle pressing!

While lime, mint, and lychee dominates the nose, the softness and suppleness of this medium-bodied sake has flavors of honeydew melon, ripened pear and fresh cut hay amplified by vibrant overall acidity.
