Sato no Homare - Mountain Crossing

Founded in 1141, this is the oldest active brewery in all of Japan (based on the oldest written records available) and only brews Ginjo and Daiginjo grade sake. A ll of their sake, but most notably this one, is of the absolute highest quality and brewed with extreme care and effort using only the finest rice and water . The Yamada Nishiki rice used in this sake is specifically grown for this brew. Mountain Crossing is also nama-chozo which means sake that was pasteurized only once (rather than twice). This process gives the sake some stability while retaining some of the livelier flavors generally associated with unpasteurized sake. Mr. Sudo is the 55th generation of his family to brew sake. Now that is a lot to be proud of!
