Nanbu Bijin - Ancient Pillars

Nanbu Biijin, formerly known as Kuji Shuzo, is located in the southern part of Iwate Prefecture in a region called Nanbu, known for its lush, beautiful natural reserves and fine water. Ancient Pillars is also nama-chozo genshu which means two things: 1) the sake was pasteurized only once rather than twice (nama-chozo) and 2) no water was added to dilute the alcohol after brewing (genshu). The result is a stronger sake with some of the livelier flavors generally associated with unpasteurized sake. This is also truly a local Iwate sake since the water, yeast, and brewery workers are all from Iwate. In fact, they built the brewery right around the well they discovered to protect their vital water source. Toji Yamaguchi even spreads his knowledge locally by teaching student Tojis at the university.

Tasting Notes
This zesty sake is bold and versatile with concentrated floral, citrus, and chocolaty notes. It is very balanced with crisp and clean acidity. Sandalwood and marshmallow flavors add to its overall finesse.
